Sweet as Pie!

If interested the instructions to make the jewelry holder found in my bedroom is in the post below!

Back at Christmas time my Grandma Knudsen gave us the Lion House bakery Cookbook. I think it was Erik's favorite gift! Erik LOVES baked goods, and I don't really bake them very often. If I do it's like Chocolate chip cookies or brownies from a box. Those are my favorites anyway, so why not? (what a selfish wife I am) Well Erik decided he was FED up! lol No, he also really likes baking and so on Sunday he was determined to make himself an apple pie.

His preparation actually started last Friday. He looked through the cookbook decided what he wanted, made a shopping list, bought the ingredients, and then watched the dvd that accompanies the cookbook on the proper way to make pies. yes, that's right, my husband watched a dvd on how to make pies! baha! Cracks me up! I hear this strange womans voice coming from the living room and go in to find Erik just hanging with the Lion House chef learning to make a pie!

Anyway so, after church he puts on his apron and asks me If I wanted to help, I really didn't want to but I couldn't say no to that face all lite up with excitement! So I joined him. Little did I know he was going to make us do a step or two, then go watch the dvd on the next steps, then do them, then go back to the dvd, etc. haha. He wasn't messing around, he was going to do this pie right! I was very patient...which is a big deal for me. We took our sweet time and I tried to make my measurements up to par with his perfect standards. So here's my little baker mixing the pie dough with his hands because the Lion House Baker say's it's a "soothing and therapeutic experience" (I'm not kidding!)
Putting the top crust on just right. This is tricky stuff!
Here is the masterpiece before it get's put in the oven.
TA DA!!!! Isn't it the most beautiful pie you have ever seen?? (and most beautiful boy!) ;) It seriously was perfect. And, it even tasted as perfectly as it looks! I was soo proud of him. (and he was pretty proud of himself!) lol. He did such a good job. It was really fun to bake together and to see how happy it made Erik. We need to do that more often. He loved sharing it with some friends, it was so cute. Good Job Erik! (I know I am making it sound like he is 5 and I am his mother, but that's kinda how I felt, just that it was really cute and I was really proud, and he was so into it, you know?) haha. It was quite the success!

That pie looks so good! I have a Lion House cook book, but I've been too afraid and feel like I don't have time to whip it out and be a prof. cook! I need to!!

It looks so delicious, Erik! Thanks for tempting my appetite, Nichole! No seriously, I've kind of gone back to the "icky-nothing sounds good" stage that I had 1st trimester. But that apple pie...oh heavens! How divine! And how lucky that you guys have a DVD that coaches you through such a touchy and tempermental thing to make as homemade pie crust! You'll have to teach Larry and I, one day!

I love this. So great, of you and Erik. Jennifer and I both said we are waiting for our piece. What a great husband you have there!
